Cork is a small wine bar on Thompson Street that does one thing and does it well: it makes you want to stay longer than you planned.

The Vibe

The room is compact and low-lit — candles, dim overhead light, red velvet curtains, tables close enough that the couple next to you is basically in the conversation. It doesn't feel crowded so much as contained. Music hums in the background; on Sundays, a live jazz band takes over and the place tips from quiet date bar into something more lively. Come Thursday or Friday and the room fills fast — it's still conversation-friendly early, but by 10pm the noise climbs.

What to Order

  • The charcuterie board — French duck meats and aged cheeses built to track with whatever you're drinking; the staff will pair it to your glass without being asked.
  • Let the bartender choose your wine — the list pulls from small old-world producers and runs from Georgian orange wines to approachable southern Italian reds; whoever's behind the bar knows it cold.
  • Skip the cocktails — the Bellinis and spritzes are fine for happy hour, but this room is built for wine; ordering a mimosa here is technically allowed and also a waste of the list.

When to Come

Wednesday or Thursday, before 9pm — the room has room to breathe and the staff has time for you. Happy hour runs Monday through Friday and the pours are genuinely affordable for SoHo. Skip Saturday unless you arrive early; it fills and stays full. Walk-ins are usually fine on weeknights.
