Slide into a candlelit booth, order the Negroni straight from the tap, and if you're early enough, the Dante Martini — gin, two vermouths, a whisper of cedro — is the kind of drink that makes the conversation flow without either of you noticing. Snag a seat on the terrace if the weather cooperates; the Hudson Street light at dusk is doing half the romantic work for you.

Palma has been doing ivy-covered, candlelit Italian on Cornelia Street since 2001, and at this point it practically invented the West Village date night. Request the back garden when you book — it's strung with light, walled in greenery, and spaced generously enough that you're not narrating your evening to the couple beside you. The housemade pasta is the move; don't skip dessert in-house if the panna cotta is on.

End the night at Milk Bar — not because it's fancy, but because it's fun, and fun is underrated on a date. Grab the Cereal Milk soft serve (yes, it tastes like the bottom of a bowl of cornflakes; yes, that's the point) or a slice of Milk Bar Pie and take it to go. The West Village is best experienced in motion after 10pm anyway.
